Potato, Broccoli and Onion Omelette

A delicious dish classically made for breakfast makes a healthy and protein packed meal any time of the day! Makes 2 servings.

Ingredients


  • 4 large eggs

  • 1 medium potato, peeled and diced small

  • 1 cup broccoli florets 

  • ½ medium onion, thinly sliced

  • 2–3 tbsp oil or butter

  • Salt & black pepper, to taste

  • Optional: cheese (cheddar, mozzarella, or feta), garlic, chili flakes


Instructions:


  1. Heat 1–2 tbsp oil in a skillet over medium heat. 

  2. Add diced potatoes with a pinch of salt and cook for 8–10 minutes, stirring occasionally, until tender and lightly crispy.

  3. Toss in the onion and cook 2–3 minutes until soft.

  4. Add broccoli and cover, cooking another 3–4 minutes until just tender.

  5. In a bowl, whisk eggs with salt, pepper, and optional add-ins like cheese, garlic, chili flakes, if you wish.

  6. Spread the veggie mixture evenly in the pan.

  7. Pour eggs over everything.

  8. Cook on low–medium heat until the bottom sets about 3–5 minutes.

  9. Fold the omelette in half and cook another minute. Serve.
