That's A Wrap! Lettuce Wraps

A crunchy, flavorful meal that can serve as a light lunch or dinner option! Really a fun dish with children, as kids of all ages love building their own perfect bite! Serves 2 to 4–4 with the optional addition of more protein at the end, such as smoked salmon, shredded roast chicken, or even scrambled egg.

Ingredients
1 cup of diced potatoes
1 cup of brussel sprouts, halved
1 cup of shredded carrot
1 cup of thinly sliced onion
1 cup of sliced and halved cucumbers (half circles)
Optional: smoked salmon, baked salmon, shredded roast chicken, scrambled egg, whatever you like
For sauce:
½ cup peanut butter
A lime, juiced and zested
2 ½ tablespoons of honey
3 tablespoons of soy sauce
Water to thin as needed
Instructions:
Place brussel sprouts and potatoes on a baking sheet and cover with a light cooking oil, salt, and pepper.
Roast brussel sprouts and potatoes in the oven 425° for 20-30 minutes until crispy.
Make your peanut sauce by combining all the ingredients–lime juice, peanut butter, honey, and soy sauce. Add a splash of water and mix in until desired consistency. A thickness similar to honey will work great!
While those veggies are roasting, go ahead and prepare you cucumbers, carrots and onions–thin ribbons of fresh vegetables will add fresh crunch and flavor without overpowering the lettuce wraps or making them too soggy.
If you wanted to add extra protein, go ahead and prepare that now as well!
Serve your meal with the ingredients separate so people can build their own! Don’t forget that delicious sauce!
